Tecnoinox
Tecnoinox was established in 1984 in Pordenone and started its own activity producing a range of complementary professional equipment such as: salamanders, ice crushers, deep fryers, toasters, cream whipping machines, egg boilers, addressed to small and middle sized kitchens, later specializing in the realization of complete modular cooking lines.
Exploit Closed Version
2 models of ultra-rapid salamanders which stand out because of a structure which is closed on three sides so as to reduce heat loss. The cooking grids, in chromed zinc steel rod wire with heat-resistant handles, can be placed on runners at 2 different heights from the special electric tungsten filament heating elements, located in the top of the machine, in order to vary the intensity of heating of the food being cooked. A lock-device prevents them from dropping accidentally. An extractable sauce collection pan allows an easy cleaning. Ease of use is guaranteed by a single control which activates a timer from 0 to 30 minutes plus a continuous operation position for the heating elements. It is also possible to mount it on the wall with special brackets (available on request).
Exploit Open Version
Two models, ideal for grilling and cooking with heat radiating from above, achieved with special electric heating elements with a tungsten filament, secured under a mobile top which, running along
guides, can be positioned at different heights according to the food being cooked. A transparent glass ceramic sheet protects the heating elements and allows an easy cleaning. These heating elements warm up rapidly, bringing the EXPLOIT salamander up to the right temperature in only 20 seconds. Besides making a cook’s work much easier it saves energy thanks also to the timer that stops electricity at the end of the time set. The biggest model (QSE60) features a 1/1 GN dimensioned hob and you can choose a full or an half activation of the heating elements. The stainless steel drip trays and the chromed steel grids, with heatproof handgrips, are removable for the cleaning and are fitted witha safety stop to prevent them tipping over accidentally.
Pass-through Salamanders
3 models (2 electric and 1 gas) designed to rationalize work between the kitchen and the area where the waiters pick up the dishes. The distance between the cooking grills and heat source in the top is adjusted using an 8-position rack system. The temperature is controlled by means of an energy regulator (on electric models). Model SEL2 features dual controls for controlling 2 independent
heating zones. On the gas model, the stainless steel mesh radiative elements are heated by means of 2 burners with pilot light and safety thermocouple, regulated by a cock with valve and featuring
piezoelectric ignition. The stainless steel drip pans and the chromium-plated steel grills, with heatproof handles, slide on guides featuring a safety retainer to prevent the grill falling out, and can be removed for cleaning.
Salamanders open 3 sides
5 models ideal for grilling or cooking by means of radiation deriving from the high-temperature stainless steel armoured electrical heating elements located under a moving plane. It slides on guides and can be positioned at various heights as regards the type of food being cooked. All models feature reclining heating elements for easy cleaning under the moving plane. Models SE60 and SE80 feature dual energy regulators for controlling two independent heating zones. The dual energy regulators in the SCP model, on the other hand, are used to control the upper and lower heating
elements independently. The stainless steel drip pans and grills in chromium-plated steel, with heatproof handles, can be removed for cleaning.
Convection Oven
Made of stainless steel, they are easy to use, reliable and safe.A fan grants an even distribution of the heat and a manual humidifi er ensures the right level of humidity wanted inside the chamber.Designed for small-medium gastronomies, these ovens meet the requirements of those who need high performances in the kitchen.Models featuring GN 2/3 and GN1/1 baking trays.
Combination Oven
Gas and electric boiling pans
3 models with a 55-litre useful capacity: 2 gas, 1 with direct and indirect heating, + 1 electric model with indirect heating. In the indirect versions there is an interspace that prevents the food from sticking to the sides and to the bottom. The latter is made in AISI 316 stainless steel in order to avoid any possibility of corrosion. The bearing structure, the lids and the interspaces are made in AISI 304 stainless steel. Pressure-control devices are fitted in the interspace of the indirectly heated models (pressure switch, safety valve and manometer). Heating through high-efficiency burners or armoured heating elements located inside the interspace for quicker cooking. The gas versions work with natural and liquid gas.
Gas and electric tilting bratt pans
4 models, with a capacity of 40 useful litres each (2 gas and 2 electric); the bottom of the basin can be either in high conductivity iron or in AISI 304 stainless steel, 10 mm. thick. The bratt pan has a manual overturning, by means of a hand wheel. The top cover is in AISI 304 stainless steel, with a double handle made in an athermic material. The gas appliances are heated by stainless steel tubular burners, piezoelectric ignition, safety valve with thermocouple, temperature regulation from 100°C to 300°C and working with natural and liquid gas. The electric version are heated by armoured heating elements; thermostatic control of the temperature (from 45°C to 300°C), additional safety thermostat. Shaped spout to drain the basin completely.
Refrigerated bases
Six models designed to preserve food and support the top elements. These appliances help to have a better workspace in the kitchen. Made entirely of AISI 304-18/10 stainless steel, they have Gastro Norm compartments and drawers in various combinations. They have built-in refrigerated unit and a ventilated evaporator to achieve an even temperature in the fridge. The automatic functions are controlled by a digital thermostat. Defrosting thanks to hot gas. Inside temperature is always displayed as required by the current standards of hygiene.
Bases and bridges
The Tecno 70 bases have been designed to support and fix all the top modules of the range with a quick, slot-in system. Entirely made of AISI 304-18/10 stainless steel they can be fitted with left or right doors, GN drawers or GN runners, with a base heater thermostatically controlled, suitable to keep dishes hot and food warm. Some models are supplied with doors and/or drawers. The bases, as well as all the appliances of the “standing” TECNO 70 range, have the sides already preset for connecting modular bars, in order to support all the “top elements”.
Gas Cookers
Four models ideal for cooking several kinds of food. 3 kinds of burners with different powers made of vitreous enamelled cast iron. Electric or gas ovens with GN 2/1 internal dimensions; bottom and runners for the 4 backing trays made of enamelled steel removable for easy cleaning. Electric oven thermostatically controlled from 60° to 300°C; by means of a commutator the operator can switch on the heating elements in different combinations (function GRILL, BAKE or CLASSIC BAKE). Gas ovens with thermostatic temperature adjustment from 150° to 290°C. Pilot flame and safety valve
with thermocouple. GN 1/1 compartment may be fitted with runners on PF105 models. The sides can be fitted with modular bars to support all the “top” elements. The gas versions can work with natural of liquid gas.
Electric Cookers
Four models with electric ovens, 2 with round and 2 with square hot plates, controlled by a 7-position power regulator. The plates have a built-in thermostat which automatically reduces the
power supplied when no container is placed on top. Easy cleaning is achieved thanks to the hot plates, fastened hermetically to the pressed top with raised edges to prevent liquids spilling over.
Lights indicate what plates are on. The electric oven has 2/1 Gastro Norm internal dimensions and is made of enamelled steel. The oven temperature is thermostatically controlled and by means of a
commutator the operator can switch on the heating elements in different combinations (function GRILL, BAKE or CLASSIC BAKE). The zinc-chromium plated oven grill is standard supplied. 2 models are supplied with a cupboard base fitted with doors sized for GN runners, heated on request. The sides can be fitted with modular bars to support all the “top” elements.
Electric or Gas Pasta Cookers
Four models ideal for boiling pasta, rice, gnocchi, ravioli and also vegetables. The high heating power, the shape and the high capacity basin made of stainless steel AISI 316 preventing any risk of corrosion, let you cook foods quickly and precisely without producing foam which is drained by an overflow. Electric models are provided with a thermostat that controls the temperature and an
additional safety thermostat. Gas models have a on-off valve, a piezoelectric gas lighter, a pilot light and a safety thermocouple. The gas versions can work with natural or liquid gas.
Chip Scuttles
Ideal for keeping fried products warm, (especially chips, croquettes, sausages, etc.) avoiding the food to loose its tasty smell and consistency. A heating element set in a ceramic reflector dish,
radiates the heat downwards to a 1/1 Gastro Norm basin with a drilled and shaped false bottom, to let food drip. Both basin and false bottom are removable. A continuous power regulator guarantees the precise setting of the temperature
Worktops
Four very practical modular models, designed to complete the modular Tecno 70 line. These modules are ideal for any number of jobs, beating, mincing, slicing, etc. or can be used as a working table as well. They come with a reinforced top that can be equiped with a plastic chopping board. Two models are already fitted with drawers, with internal Gastro Norm dimensions, for knives and various other utensils.
Bain Marie
Four models ideal for keeping all kinds of food hot at the right temperature and level of humidity. Entirely made of AISI 304- 18/10 stainless steel basin pressed with rounded edges for Gastro Norm containers, 150 mm deep, drainage through a safety device with an extension pipe making this equipment very practical, safe and easy to clean. Cock with valve, safety thermocouple and piezoelectric gas lighter on the gas versions. The electric versions are thermostatically controlled from 60°C to 90°C. All models have an additional safety thermostat. The gas versions can work with natural or liquid gas.
Gas Lavastone Grills
2 models, ideal for cooking meat, fish or vegetables made incredibly tasty thanks to the tubular burner heating system that makes the lavastone white-hot giving the food that characteristic slightly smoked taste: something your customers will love. The grill is entirely made of AISI 304-18/10 stainless steel and has spray guard on three sides with an internal support for the lava, both of which can easily be removed making cleaning or servicing fast and easy. The model GR70G7 has 2 grills and 2 separate and independent heating controls. The grill can run on methane or liquid gas.
Electric Grills
Two models, ideal for grilling meat, fish and vegetables, that, thanks to the special heating system with electric heating elements placed under the stainless steel grill, gives the food a particularly tasty appearance and smell, which will definitely be appreciated by true gourmets. The grills are entirely made of AISI 304-18/10 stainless steel. The removable grid, the heating elements group with anti-tipping safety blocking system and the fat basin make cleaning operations easy. The pan can be drained through a safety system that prevents accidental opening, using an extension pipe.
Gas and Electric Fryer
4 models, ideal for frying food, thanks to the high specific powers that quickly bring the temperature back to the ideal cooking temperature when the product is introduced. The shaped cooking basins have a generous “cold zone”, for a longer life of the oil. The electric versions have tilting heating elements with safety lock in a raised position; thermostatically controlled up to 190° C and equipped with additional safety thermostat. The gas versions have burners and flame tubes going through the cooking basins; a cock valve, piezoelectric ignition with pilot light and safety thermocouple. The deep fryer is supplied with a basket, a bottom mesh and a cover for each cooking basin. The gas versions can work with natural or liquid gas.
Electric Deep Fryer
Two models ideal for frying food, thanks to the high specific powers that bring the fryer back up to temperature quickly when the food is introduced. The shaped basin with an
extensive cold zone helps the oil last longer. Thermostat adjustment up to 190°C. Supplementary safety thermostat. The heating elements group can be lifted and has a
safety block in the raised position, which makes the cleaning of the basin fast and easy. One basket and one lid are supplied for each basin.
Gas / Electric Fry Top
Six models designed to grill meat, fish, vegetables, eggs and cheese. Versions with smooth or ribbed steel plate or smooth polished hardened chrome. The chrome models fry tops are equipped with an
additional overheating safety thermostat and the heat is transmitted only in the zones where the food is in contact with, limiting the dispersion of heat radiation towards the cook and making the fry top easy to clean after use. The hot plate is heated by tubular stainless steel burners, controlled by a cock with valve, safety thermocouple and piezo igniter. The fry tops can work with natural or liquid gas. Gas Cooktops with central hot plate
3 models available: 2 offer the interesting combination of a central hot plate together with open burners, ideal for the accommodation of larger pans. Sturdy pan supports and 3 types of burners with stabilized flame are available in different powers and are made of vitreous enamelled cast iron. One of the burners, with 7,2 kW, double ring, is ideal for ultra rapid cookings. The pressed top with raised edges prevents liquid from spilling over and the removable tray to collect residual food falling down from the burners, makes the cleaning operations easier and faster. Smooth cast iron plate with central removable ring; 9 kW burners are set under the single module plate whilst 4,5 kW burners under the half module. Pilot flame and security valve with thermocouple. The appliances can work with natural or liquid gas.
Gas Tops
3 models ideal to organize the cooking of food using different kinds of pans. Thanks to the 7,2 kW – double ring burners with stabilized flame, the heat-up time is considerably cut down. The pressed top with raised edges to prevent liquid from spilling over and the removable tray to collect residual food falling down from the burners, make the cleaning operations easier and faster. Electric Ceramic Glass Tops
Two models heated by circular infrared heating elements under a smooth ceramic-glass cooktop that intensifies the transmission of the heat, drastically reducing the warm-up time. The tops are sealed and very easy to clean without any risk of liquids getting inside. The precise temperature adjustment is controlled by a continuous power regulator, while an automatic limiter prevents overheating. The pilot lamp on the plate shows the residual heat on the ceramic glass top in order to prevent the safety of the operator.
Electric Cooking top
Six models, (3 with round and 3 with square hot plates) that favour cooking fast thanks to a 7-position power regulator.
